Date Your Cake!! 💓😝

Makes : 18 muffins/One 9" cake

Ingredients         
                         
28-29 nos        - Seedless Dark Dates 
1 cup/120g      - Emmer Wheat Flour
1 cup/110g      - Whole Wheat Flour
1 cup/230g      - Milk
1 cup/230g      - Butter Milk
3/4 cup/140g   - Ghee
2/3 cup/120g   - Powdered Dark Jaggery 
¼ cup/20g       - Assorted Nuts                                               (Crushed/Whole)
1 tsp/5g           - Baking Soda 
¼ tsp/1.5g       - Vanilla Essence

Procedure

  • Preheat the oven at 200°C for 30-40 minutes.
  • Grease a 9" inch cake tin or line a muffin tray.. whatever you feel like ! 😁
  • In a bowl add the dates and milk and heat in the microwave for 2 minutes.Add the jaggery in this. Stir till jaggery melts.Allow the mixture to cool for 10-15 minutes.
  • Pulse the Jaggery-Date Milk along with the buttermilk until you get a smooth paste.
  • Whisk the ghee into this paste. Add the vanilla essence to this.
  • Fold in the dry ingredients part by part.Finally add the nuts.
  • Pour the batter into the cake tin or pipe into the muffin tray.
  • Bake for 30 minutes at 190°C.
  • Trust me these taste FAB !!!😍
~Zesty Ideas
  • Add some roughly chopped pieces of dates into the batter to enrich the flavour of the cake/muffins!
  • You can sprinkle some Almond flakes onto the cake/muffins before putting them in to bake to make them prettier and tastier.~
