Comforting and Healthy Brown Fried Rice
Makes : 2-4 Servings
Ingredients
1tbsp /13g – Virgin Coconut Oil
2 medium – Onions (Finely chopped)
½ portion – Cabbage(Finely shredded)
7-8 beans – French Beans (Boiled & Finely sliced, diagonally)
4-5 pieces – Babycorn (Boiled & Chopped in circles)
2 medium – Carrots (Finely chopped)
6-8 cloves – Garlic (Finely chopped)
2 pieces – Fresh Red/Green Chillies (Finely chopped)
½ tsp/1.25g – Vinegar
½ tsp/1.25g – Soya Sauce
To Taste – Black Salt
To Taste – Black Salt
Procedure
For the Brown Rice:
- Take a pressure cooker and fill the bottom with about ½ cup of water.
- In a small pressure cooker bowl (that fits into the cooker, based on its size), add the brown rice(thoroughly washed).
- Pour in water into the rice-bowl enough to cover upto approximately ½ inch over the rice level.
- Close the pressure cooker, along with a whistle on top.
- Turn the flame onto medium and place the cooker over it.
- Allow 3-4 whistles to pass, after which reduce the flame to a simmer for 5 minutes and eventually switch off the stove.
- Allow the heat to escape and only then open the cooker after about 10-15 minutes. Your rice is ready.
For the Fried Rice:
- In a non-stick wok/kadhai add the ghee and coconut oil. Turn the stove onto high flame mode.
- Add the garlic and chillies and saute till the smell of garlic makes your taste buds go crazy !
- Add in the onions and saute till translucent. Put in the cabbage and saute well.
- Now go onto putting in the capsicum,carrots,and boiled other veggies.Saute until they smell and look nice & cooked.
- It's finally time to add in the cooked brown rice.
- Sprinkle the soya sauce,vinegar and black salt into the rice.
- You've got a super-yum homemade healthy fried rice, right in front of you. Go ahead and serve it hot!
~Zesty Ideas:
- Spread the rice out into a flat bowl, to cool faster. You can add some ghee into the rice to seperate out the grains well and then freeze the rice for 20 minutes for better results!
- If you love spice the way I do make some chilli garlic/ homemade schezwan sauce and add in, to your heart's content! . ~
