Pineapple and Mixed Vegetable Salad


Makes : 4 Servings

Ingredients                                  

1 cup/150g      - Cucumber (Diced)
1 cup/150g      - Carrot (Diced)
1 cup/225g      - Purple/Red Cabbage                                                   (Shredded)
½ cup/100g     - Tomatoes (Diced)
½ cup/100g     - Pineapple (Diced)
¼ cup/30g       - Cranberries (Dried/Fresh)
¼ cup/20g       - Walnuts (Crushed/Whole)
2 tbsp/30ml     - Lemon juice
1 ½ tbsp/23ml - Coconut Oil (Cold-pressed)
1 ½ tbsp/23ml - Flax Seed Oil (Cold-pressed)
1 tsp/ 5g          - Pepper                                                                      
1 tsp/ 5g          - Black/Rock Salt 


*You can add in some pomegranate seed,some more berries and nuts to make it yummier! 

Procedure

  • Make a dressing by emulsifying the oils and lemon juice together and add the seasonings to it.
  • Add it into the cut vegetables and fruits.
  • Toss the salad.
  • Your salad is ready to be served! 

~Zesty Idea: You can sprinkle some Feta, Parmesan or Fresh Mozzarella onto it to make it more tasty.~

  3. A perfect blend of color and flavor. How about adding some.cottage cheese / grilled chicken / steamed fish to it to make it a complete meal
